Vegan Chocolate Chip Cookies (So Good, No One Will Know!)
I’ve been vegan for a long time, and these cookies are one of my favorite things to make for family, friends, and clients—no one ever realizes they’re vegan! Here’s how I easily swap ingredients in any classic chocolate chip cookie recipe:
Easy Vegan Swaps:

Replace eggs with 1 large or 2 small overripe bananas

Swap butter for solid (but soft) coconut oil

Use Signature Select dark chocolate chunks from Jewel—yes, they’re vegan!
Pro Tip:
If you’re not into the slight coconut flavor from the oil, add 1 tsp of almond or anise extract to the batter. I always do—it adds a bold, delicious note that sets these cookies apart.

Near Pratt, Albion & Leroy (just east of Central Park Ave), this pocket of homes features giant candy canes, wreaths, inflatables—even 3-story holiday “trees.” Nearly every house participates! -
ZooLights – Lincoln Park Zoo (Chicago)
A classic Chicago tradition—especially since Monday nights are free! Expect tunnels of lights, music, and holiday treats. -
The Morton Arboretum – Lisle (Western Suburbs)
Their Illumination experience is a glowing, interactive walk through the woods. Stunning and peaceful. -

The Lightscape display features dazzling light tunnels, sculptures, and synchronized music—perfect for a winter stroll.
